Sticky Coconut Rice (Instant Pot)

For some reason I just can't seem to master cooking rice on the stove top. Since getting my instant pot around three years ago means I've been able to cook up a batch of perfect rice every time. In this case I went for a sticky rice and I've got a easy hack for getting perfect "stickiness" every time... use CHEAP RICE!
It's as simple as that. It's the starch that makes the rice sticky and the cheapest ones are always the starchiest. I just use whatever one is in the value range at the supermarket.
Ingredients
1 Part rice- rinsed under cold running water. If you don't rinse it I find the rice develops more of a slimy, rather than sticky texture when cooked.
1.5 Parts liquid-A small tin of coconut milk, or you could use fresh (around 165ml) and the rest water
Splash of lemon juice
Pinch of salt
The reason I've listed the rice and liquid in parts rather than quantities is because your instant pot may not be the same size as mine, and it's important to meet the minimum liquid requirement in your particular pot.

Method
Rinse your rice under cold running water and add to the instant pot.
Add in all other ingredients. Pop the lid on and close the pressure valve. Set the timer the 12 minutes. This is what my rice setting is preset to, so yours may be as well. For reference this is the instant pot that I use.
When it's finished you can either allow the pressure to release naturally or do it manually. Then fluff the rice a little with a fork.
