Easy mushroom stroganoff- One pot!

And here's the details of the second recipe from my YouTube channel. This recipe is rich, creamy and full of flavour. But the thing that really makes this recipe so delicious is the use of a white wine stock cube (I just picked mine up from Tesco). Whereas actual white wine would not only be more pricey for a decent one, but also not all wine is actually vegan.
Ingredients
Half a white onion- diced
3 Garlic cloves- finely chopped or minced
Around 7 closed cup mushrooms- But you can really use any kind, or a mixture of your favourites
2 TBSP of vegan butter
2 TBSP of plain flour
1 White wine stock cube diluted with 250ml boiling water
250ml (around 1 cup) of non dairy milk- I used almond
5 Nests of tagliatelle- or around 200g of any other kinds of pasta
Olive oil, black pepper and 1TSP of oregano

Method
Heat the oil over a low/medium heat and gently fry off the onion, then add the garlic, before adding the mushrooms and frying them off until soft. Season with black pepper and the oregano.
Melt the butter into the pain and when it's bubbling add the flour. Whisk briskly to form a paste.
Add your pasta and cover with the liquids (stock and milk). Cover and boil gently for 10-15mins, until the pasta is cooked and most of the liquid has been absorbed. Check on the pasta a few times throughout, mixing it to ensure there is no sticking. If it's absorbing the liquid quickly just add more water; or milk if you want it more creamy.
Once the pasta is cooked through and you have your sauce at your desired consistency you are ready to serve up. Vegan parmesan would go really well too!

Notes
To make this recipe oil free just add a splash of water at the start to fry your onions in and make sure you use a good non stick pan.
You can reheat this recipe, I just recommend adding a little extra liquid before you do as it does dry out a bit.
To make this recipe gluten free switch out the pasta for a gluten free alternative and a gluten free all purpose flour will work the same or even corn flour.
